How do I know if my grind size is right?
Taste your coffee. If it is sour, thin, and under-developed, your grind is too coarse (water passes through too fast). If it is bitter, astringent, and harsh, your grind is too fine (water extracts too much). The right grind produces a balanced cup with sweetness, clean acidity, and a pleasant finish.
Why does grind size matter so much?
Grind size controls surface area. Finer grinds expose more surface area to water, increasing extraction speed. Coarser grinds expose less, slowing extraction. Each brew method has an optimal extraction time, and the grind size is the primary variable you adjust to match that time. Wrong grind size is the single most common cause of bad coffee.
What is the difference between a burr grinder and a blade grinder?
Burr grinders crush beans between two surfaces to produce uniform particles. Blade grinders chop randomly, producing a mix of dust and boulders. Uniform particles extract evenly, which is why burr grinders produce noticeably better coffee. Even an inexpensive hand burr grinder outperforms a blade grinder.
Can I use pre-ground coffee for espresso?
Pre-ground "espresso" coffee from a bag is almost never fine enough for a real espresso machine. Commercial espresso grind degrades within minutes of grinding because the high surface area accelerates staling. For drinkable espresso, a fresh grind immediately before brewing is essential.
