What You Need
Step-by-Step Guide
Fill the Base
Fill the bottom chamber with hot water up to just below the safety valve. Using hot water prevents the coffee from cooking.
Grind Medium-Fine
Grind coffee to medium-fine, slightly coarser than espresso but finer than pour-over. Fill the filter basket without tamping.
Assemble
Place the filter basket in the base. Screw the top chamber on tightly. Use a towel to hold the hot base.
Heat on Medium
Place on medium heat with the lid open so you can watch the brew. Low and slow is better than high heat.
Watch for Coffee
Coffee will start flowing into the upper chamber. It should flow steadily, not sputter or explode.
Remove from Heat
When the upper chamber is about 80% full and you hear a gurgling sound, remove from heat immediately. Run the base under cold water to stop extraction.
Pro Tips
- -Start with hot water in the base. Cold water leads to over-extraction as the pot heats up.
- -Never tamp the grounds in a Moka pot. Just fill and level off.
- -Remove from heat BEFORE the sputtering starts. The gurgling means you are done.
- -Low-medium heat produces better results. High heat scorches the coffee.
